Homemade Graham Crackers
2 cups whole wheat flour (I've used both regular ww flour and ww pastry or white ww flour to make this recipe. Either works. With regular ww flour, they will just turn out a little denser and nuttier-tasting.)
1/3 cup dry milk powder
1 tsp. baking powder
1/4 tsp. baking soda
pinch of salt
1/2 tsp. cinnamon
Mix these dry ingredients in bowl. Make a nest and add:
1/3 cup vegetable or canola oil
1/2 cup warm honey (I normally warm the honey in a ceramic mug by microwaving it for 30 seconds on high)
1 tsp. vinegar
1 tbsp. vanilla
2 tbsp. water
Stir together. Dough should resemble that of a soft pie crust dough. After sprinkling work surface with a little flour, roll dough out until it's about 1/4" thick (comparable to the thickness of the dough if you were making sugar cookies). You may need to add a few teaspoons of flour to make the dough hold together. You can either cut the dough into shapes with cookie cutters or cut the dough into squares. Bake at 350 degrees for about 8 minutes or until slightly browned on the bottom. Cool on wire rack. (These are not excessively sweet, just in case anyone imagines they should taste like cookies.)

Love the new blog background. I always feel nervous sharing a recipe with someone, but I do really love making these. They're overall pretty healthy, and my kids will eat them. Hope everything's going great.
